Recipe: Lobster Tacos with Avocado Salsa

You and your family and guests are going to love this one! It combines all of the best foods of summer!
1 large tomato chopped
1 ripe avocado chopped
2 T. finely chopped cilantro
1 T. fresh lime juice
1 1/2 t. minced jalapeno pepper
3/4 t. salt divided
2 T. olive oil
1/2 C. thinly sliced red onion
2 cloves garlic minced
1/2 t. ground cumin
1/2 t. ground chili powder
1/8 t. ground red pepper
2 C. coarsely chopped cooked lobster meat
4 (8-inch) flour tortillas
Shredded lettuce thinly sliced red onion, sour cream
- Combine first 6 ingredients and 1/2 t. salt in a medium bowl. Cover and chill salsa until ready to serve.
- Heat oil in large skillet over medium-high heat. Add sliced red onion and garlic. Cook 2 minutes until they begin to soften. Add cumin, chili powder, and red pepper - cook 1 minute. Add lobster meat and remaining 1/4 t. salt. Cook 1 minute or until heated through.
- Heat tortillas according to package directions. Top each tortilla with1/2 C. Lobster mixture and 1/2 C. avocado salsa. Serve with lettuce, red onion, and sour cream.
Makes 4 tacos.
