Coffee Crusted Prime Rib

Start the day before serving

Ingredients

2 tablespoons finely ground coffee

2 teaspoons chili power

1 teaspoon onion power

1 teaspoon ground pepper

1 teaspoon ground mustard

½ teaspoon salt

½ teaspoon garlic salt

½ teaspoon dried oregano

½ teaspoon cayenne pepper

1 beef rib eye roast (4-6 lbs.)

2 tablespoons olive oil

Directions

Combine first 9 ingredients in a bowl and mix well. Tie roast at 1&1/2” intervals with kitchen string. Rub contents from bowl, cover and refrigerate for 8 hours or overnight. Remove roast from refrigerator 1 hour before grilling: Brush with olive oil Place roast in a roasting pan on a rack. Place in grill on medium to low heat for 2-2&1/2 hours. Use a meat thermometer starting at 2 hours.
145 degrees for medium rare
160 degrees medium
170 well done
Let stand for 10-15 minutes before slicing. Remember meat continues to cook after you remove it from the heat so you might want to take the meat off 5 degree lower than your desired doneness. 

Note: This roast goes well with mashed potatoes, a steamed vegetable and green salad. The drippings from the pan makes a great Aus Jus gravy. A big red wine like a cabernet sauvignon or zinfandel goes well with this meal.
