Here’s a great one for the lazy chef! It would also work well on a camping trip. Makes clean up a breeze.
Crack two large eggs into a quart size ZIPLOC freezer bag. Shake to combine and somewhat scramble the two eggs.
Add what extras you want; cheese, ham, cooked sausage, green onion, peppers, tomato, spinach, salsa, ANYTHING you would put in your omelet. Shake again to combine all ingredients.
Remove air from the bag and zip tight; place the bag (or bags) into a large pot of rolling and boiling water for 13 minutes. Open the bags and the omelets will roll out.
Using the above method, each person can prepare their own omelet, as you can cook up to about 6 at a time in a large pot.
Serve with toast and hash browns…
