There are a lot of good hummus products on the market, but this one is so easy and delicious that might as well make it yourself!
2 – 14 ½ oz cans garbanzo beans (1 can drained, liquid reserved.)
1/2 Cups tahini (sesame paste)
2 cloves garlic
1/4 t. cayenne pepper (to taste)
Juice from ½ lemon
In a food processor, add garlic and pulse to chop. Add the full can of beans, un-drained, and just the beans from the other can. (Reserve the liquid from this can, in the event you need to ‘thin’ the dip) pulse to mix. Add the tahini, lemon juice and cayenne, blend till smooth.
Taste, and add salt as needed. Drizzle with good olive oil.
For a twist, I substitute chipotle powder for the cayenne, and I use more, for that smokey taste. I have also added cilantro, about ½ C chopped to the mix for a nice fresh taste.
This is an easy, quick, health, snack. Serve with pita chips, fresh vegetables, pita bread or crackers.
