Recipe: 12 Minute Mushroom Carbonara

If you love pasta and mushrooms (and who doesn’t??) this recipe is for you!


1 Package spaghetti

1/2 Pound sliced fresh mushrooms

1 T. Olive oil

1 T. Butter

2 Cloves of garlic, chopped

2 Shallots, finely chopped

10 Fresh sage leaves, shredded

3 Eggs, beaten

1/2 C. Freshly grated Parmesan cheese, divided


  1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally, until tender yet firm, about 12 minutes. Drain, reserving 1/2 cup of spaghetti water.
  2. Meanwhile, add oil, butter, garlic, sage, and mushrooms to frying pan. Cook until the mushrooms soften and release moisture and garlic and shallots are softened.
  3. Beat eggs together in a bowl. Add 1/2 of Parmesan. Mix well and stir into cooked mushroom mixture. Add spaghetti water to form sauce.
  4. Serve pasta topped with mushroom sauce and remaining cheese.
