Recipe: 12 Minute Mushroom Carbonara
If you love pasta and mushrooms (and who doesn’t??) this recipe is for you!
1 Package spaghetti
1/2 Pound sliced fresh mushrooms
1 T. Olive oil
1 T. Butter
2 Cloves of garlic, chopped
2 Shallots, finely chopped
10 Fresh sage leaves, shredded
3 Eggs, beaten
1/2 C. Freshly grated Parmesan cheese, divided
- Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally, until tender yet firm, about 12 minutes. Drain, reserving 1/2 cup of spaghetti water.
- Meanwhile, add oil, butter, garlic, sage, and mushrooms to frying pan. Cook until the mushrooms soften and release moisture and garlic and shallots are softened.
- Beat eggs together in a bowl. Add 1/2 of Parmesan. Mix well and stir into cooked mushroom mixture. Add spaghetti water to form sauce.
- Serve pasta topped with mushroom sauce and remaining cheese.
