Chile Salsa


2 lg. ripe red tomatoes, diced

4 tomatillos, diced

½ large white onion, finely chopped

1 jalapeno, seeded and chopped

1 clove garlic, run through a garlic press

2 tbsp. olive oil

1 tbsp wine vinegar

1 tbsp fresh cilantro, chopped

½ tsp salt

½ tsp ground black pepper

¼ tsp ground oregano


Mix all ingredients together (food processor) and chill

Makes approx. 2 cups

Serve with tortilla chips and lots of beer!
