This one is from my Dad. My kids used to call it bubble gum stew.
½ lb. ground pork sausage
2 tablespoons butter
1 large clove garlic, pressed
1 sixteen oz. can of tomatoes
1 tsp. salt
1 tsp oregano
3 oz. medium uncooked egg noodles
½ lb. sharp cheddar cheese, shredded
3 tablespoons olive oil
1 cup chopped onions
1 green pepper cut into ¼ inch strips
1 eight oz. can tomato paste
¼ tsp fresh ground pepper
1 lb. zucchini
Make 10-12 tiny balls of sausage. Fry slowly until done turning to brown all sides. Pour off excess grease.
In a large skillet heat oil and butter, add onions and peppers, sauté until tender.
Stir in tomatoes, tomato paste, garlic, oregano, salt & pepper.
Slice unpeeled zucchini into ¼ inch slices and place into sauce together with uncooked noodles.
Add sausage balls cooked and drained.
Cover and simmer until zucchini and noodles are tender.
If mixture becomes too thick pour in small amounts of hot water to keep from sticking.
Cover mixture with cheese and serve as soon as cheese is melted.
