Green Beans in Tomato Sauce

Ingredients (4 Servings)

1 Pound green beans

1/2 Pound chopped tomatoes

2 Cloves garlic, crushed

2 T olive oil

1 T chopped parsley

Pinch of crushed red pepper

Salt and pepper to taste

Wash green beans and trim the ends.  Cook for 15 minutes in salted boiling water.

Meanwhile, prepare the tomato sauce by gently heating the olive oil in a large saucepan.  Add the crushed garlic and red pepper and cook on very low heat until the garlic turns a light golden color.  Add the tomatoes, increase the heat to medium, and cook for 10  minutes.  Drain the beans and add them to the tomato sauce.  Season to taste with salt and pepper and cook for another 10 minutes.  Sprinkle with chopped parsley and serve immediately.
