Orzo Vegetable Salad

Dressing:

1/3 C Olive Oil

4 t. Lemon Juice

2 t. Grated Lemon Zest

2 t. Rice Vinegar

1/2 t. Salt

1/4 t. Pepper

Salad:

1/2 C Uncooked Orzo Pasta

3 Plum Tomates, Chopped

1 C Marinated Artichoke Hearts, Chopped

1 C Coarsely Chopped Fresh Spinach

2 Scallions, Chopped

1/2 C Crumbled Feta Cheese

1 T Capers, Drained

Cook orzo according to package directions.  Meanwhile, combine remaining salad ingredients.  In a small bowl, whisk together the dressing ingredients.

Drain the orzo and rinse with cold water.  Add to the vegetable mix.  Pour dressing over.  Toss to coat.  Chill and serve!
