Company’s Coming Glazed Lamb Chops

Cooking time:  30 Minutes

Serves:  6


3 T. Olive Oil

6 Lamb Rib Chops, Frenched

Salt and Pepper to taste

1 T. Minced Garlic

1 C. Light Brown Sugar, Packed

1/3 C. Balsamic Vinegar

1/4 t. Cayenne Pepper

Fresh Parsley (Garnish)

Add olive oil to pan and heat over medium-high heat.  Season lamb chops on each side with salt and pepper.  Once pan is hot, sear chops on each side for up to two minutes, then remove from pan and let rest.  Turn the heat down to medium-low.  Add garlic to pan and cook for one minute, making sure not to burn it.  Whisk in sugar, vinegar, cayenne pepper, and salt and pepper to taste.  Allow the sauce to thicken for five or ten minutes.  Place chops back in the pan, baste with the sauce, and continue to cook until they reach your desired level of doneness.  Remove chops from pan, place on platter and garnish with parsley.
